Preparation Steps

Prepare the Pineapple
Cut the pineapple into quarters, leaving the skin on. Remove the core from each quarter and set aside.

Combine Ingredients
In a large bowl, combine the pineapple quarters, brown sugar, water, cinnamon stick, cloves, star anise, and vanilla bean. Stir until the sugar is dissolved.

Fermentation Process
Cover the bowl with a clean cloth or plastic wrap and let it sit at room temperature for 2 to 3 days, stirring once a day to mix the ingredients. You will know it's ready when it has a slightly tangy aroma.

Strain Tepache
After fermentation, strain the mixture through a fine mesh sieve or cheesecloth into a clean container. Discard the solids.

Serve with Tajín
Chill the tepache in the refrigerator. Before serving, pour into glasses and sprinkle Tajín seasoning on top to taste.
