Prepare the Potato Pancakes
Grate the potatoes and onion using a box grater. Squeeze out excess moisture. In a bowl, combine grated potatoes, onion, egg, flour, salt, and black pepper. Mix well. Heat vegetable oil in a skillet over medium-high heat. Drop spoonfuls of the mixture into the skillet and flatten slightly. Cook for 3-4 minutes on each side until golden brown.
