    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes into a bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

    Heat the Oil

    In a deep fryer or a large, heavy-bottomed pot, heat the vegetable oil to 350°F (175°C).

    Dry the Potatoes

    Drain the soaked potatoes and pat them dry with a clean kitchen towel to remove excess moisture.

    Fry the Potatoes

    Carefully add a handful of dried potato strips into the hot oil. Fry them for about 5-7 minutes or until they turn golden brown. Remove and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle them with sea salt to taste.

    Serve Hot

    Serve the French fries immediately while they're hot and crispy.
