    Prepare the Duck

    If using leftover duck confit, shred the meat and set aside.

    Sauté the Onions

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté until they are soft and caramelized, about 8-10 minutes. Remove from heat.

    Cook the Swiss Chard

    In the same skillet, add another tablespoon of olive oil. Add the chopped Swiss chard, season with salt and pepper, and cook until wilted, about 2-3 minutes.

    Assemble the Quesadillas

    On half of each flour tortilla, layer shredded duck, sautéed onions, Swiss chard, sharp cheddar, and dollops of ricotta. Fold the tortillas in half.

    Cook the Quesadillas

    In a clean skillet over medium heat, place the folded quesadillas and cook until the tortillas are golden and crispy, about 3-4 minutes per side. Remove and let cool slightly before cutting.

    Prepare the Cherry Tomato Salad

    In a bowl, combine halved cherry tomatoes, chopped parsley, olive oil, salt, and pepper. Mix well.

    Cut the quesadillas into wedges and serve hot with the cherry tomato salad on the side.
