    Prepare the Béchamel Sauce

    In a saucepan, melt 30 grams of butter over medium heat. Add 30 grams of all-purpose flour, whisking continuously to form a roux. Gradually add 250 ml of milk while whisking to avoid lumps. Cook until the sauce thickens, about 5 minutes. Season with nutmeg, salt, and pepper. Set aside.

    Prepare the Coleslaw

    In a bowl, combine shredded green cabbage and grated carrots. In a separate bowl, mix mayonnaise, apple cider vinegar, salt, and pepper. Pour the dressing over the cabbage mixture and toss to combine.

    Assemble the Croque Monsieur

    Preheat a skillet over medium heat. Butter one side of each slice of country bread. On the unbuttered side, layer a slice of Gruyère cheese, two slices of prosciutto di cotto, more Gruyère, and a generous spoonful of béchamel sauce. Top with another slice of bread, buttered side out.

    Grill the Sandwich

    Place the assembled sandwich in the skillet and grill until golden brown on one side, about 3-4 minutes. Carefully flip and grill the other side until golden and the cheese is melted, about another 3-4 minutes.

    Serve

    Cut the sandwich in half and serve hot with a side of coleslaw.
