Make the Croutons
Preheat the oven to 375°F (190°C). Cut the country bread into cubes and toss them with olive oil and a pinch of salt. Spread them on a baking sheet and bake for about 10-15 minutes or until golden brown and crispy. Remove and let cool.

Prepare the Dressing
In a bowl, whisk together the minced garlic, egg yolk, Dijon mustard, Worcestershire sauce, and lemon juice. Slowly drizzle in the olive oil while whisking continuously until the dressing is emulsified. Stir in half of the grated Parmesan cheese and season with salt and black pepper to taste.

Assemble the Salad
Rinse and chop the romaine lettuce into bite-sized pieces. In a large bowl, combine the lettuce and croutons. Pour the dressing over the salad and toss gently until everything is well coated. Top with the remaining Parmesan cheese.

Divide the salad into serving bowls and enjoy immediately.
