Prepare the Filling
In a large bowl, combine the shredded chicken and buffalo sauce. Mix until the chicken is well coated.

Add Vegetables and Cheese
Add the grated carrot, chopped celery, and crumbled blue cheese to the chicken mixture. Stir until evenly combined.

Wrap the Spring Rolls
Lay a spring roll wrapper on a clean surface. Spoon about 2 tablespoons of the filling onto the wrapper, then fold the sides in and roll it tightly. Repeat with the remaining wrappers and filling.

Fry the Spring Rolls
Heat the oil in a deep pan over medium-high heat. Once hot, carefully add the spring rolls in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve the hot buffalo chicken spring rolls with ranch dressing on the side for dipping.
