Prepare the Rice
In a large saucepan, heat a tablespoon of vegetable oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent. Stir in the arborio rice and cook for an additional 2-3 minutes until the rice is slightly toasted. Gradually add the chicken broth, one cup at a time, stirring constantly until the liquid is absorbed and the rice is creamy. Remove from heat and let cool.

Mix the Ingredients
Once the rice is cool, combine it in a large mixing bowl with the shredded braised brisket, grated parmesan cheese, eggs, salt, and black pepper. Mix until well combined.

Form the Arancini
With wet hands, take a portion of the mixture and form it into a ball, about the size of a golf ball. Repeat until all the mixture is used.

Coat the Arancini
Roll each ball in flour, then dip in beaten egg, and finally coat with breadcrumbs.

Fry the Arancini
In a deep skillet, heat the vegetable oil over medium heat. Once hot, carefully add the arancini in batches, frying until golden brown on all sides. Remove and drain on paper towels.

Serve the brisket arancini hot with a side of horseradish dipping sauce.
