    Prepare the Vegetables

    Preheat your oven to 400°F (200°C). Toss sliced carrots with a drizzle of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until tender. In the last 10 minutes of roasting, add broccoli florets to the baking sheet.

    Make the Spicy Korean Sesame BBQ Sauce

    In a small bowl, whisk together gochujang, soy sauce, honey, sesame oil, rice vinegar, sesame seeds, minced garlic, and minced ginger. Adjust seasoning to taste.

    In serving bowls, place 1 cup of cooked red rice as the base. Top with roasted broccoli and carrots, pieces of Korean fried chicken, and a generous serving of kimchi. Drizzle with the spicy Korean sesame BBQ sauce before serving.
