Make the Dough
In a large bowl, mix the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in cold water, one tablespoon at a time, until the dough forms a ball. Wrap in plastic wrap and refrigerate for at least 30 minutes.
Prepare the Filling
In a medium bowl, combine diced apples, diced green chiles, chopped pecans, brown sugar, and ground cinnamon. Mix well and set aside.
Assemble the Empanadas
Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface to about 1/8 inch thick. Cut into rounds (about 4-5 inches in diameter). Place a spoonful of filling in the center of each round. Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal.
Bake the Empanadas
Place the empanadas on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until golden brown. Remove from the oven and let cool slightly.
Serve
Serve warm with scoops of vanilla ice cream and drizzle with caramel sauce.
