Preparation of Turkey

Thawing the Turkey
If using a frozen turkey, ensure it is fully thawed. Plan on 24 hours of thawing for every 4-5 pounds in the refrigerator.

Prepping the Turkey
Remove the turkey from the packaging, and remove any giblets or neck from inside the cavity.

Drying the Turkey
Pat the turkey dry with paper towels, both inside and out.

Seasoning
In a bowl, mix together the salt, black pepper, garlic powder, onion powder, paprika, rosemary, and thyme. Rub the softened butter all over the turkey, including under the skin. Then, rub the seasoning mixture generously over the entire turkey.

Making the Stuffing (Optional)
In a large skillet, melt 1/2 cup of butter over medium heat. Add diced onion and celery, and sauté until soft. In a large bowl, combine the sautéed vegetables with bread cubes, chicken broth, sage, thyme, salt, and pepper. Mix until combined.

Stuffing the Turkey
If using stuffing, loosely fill the cavity of the turkey with the prepared stuffing. Do not pack it tightly as it will expand during cooking.

Preheat the Oven
Preheat your oven to 325°F (165°C).

Resting the Turkey
Once done, remove the turkey from the oven and tent it loosely with aluminum foil. Let it rest for at least 20-30 minutes before carving to allow the juices to redistribute.
