Preparation
1. In a large saucepan, melt the unsalted butter over medium heat.
2. Once the butter is melted, add the all-purpose flour. Whisk continuously to create a roux, cooking for about 2-3 minutes until it turns a light golden brown.
3. Gradually add the vegetable broth to the roux, whisking continuously to prevent lumps from forming.
4. Once the broth is fully incorporated and the mixture is smooth, add the milk and continue to stir.
Seasoning
5. Add salt, black pepper, onion powder, garlic powder, and dried thyme to the mixture. Stir well.
6. Let the mixture simmer for about 10-15 minutes, stirring occasionally until it thickens to your desired consistency.
Add-ins (Optional)
7. If using, add the chopped vegetables and/or cooked meat to the gravy/soup during the last 5 minutes of cooking to heat through.
Serving
8. Once thickened, remove from heat and serve hot as a gravy over your favorite dish or as a soup in bowls.
