Preparation

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Prepare Squash

    Cut the acorn squash in half lengthwise and scoop out the seeds. Brush the insides with olive oil and sprinkle with salt and pepper.

    Cook Quinoa

    In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the quinoa is fluffy.

Filling

    Sauté Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped onion, garlic, and bell pepper, and sauté until softened, about 5-7 minutes.

    Add Spinach

    Add spinach to the skillet and cook until wilted, about 2-3 minutes.

    Combine with Quinoa

    In a large bowl, combine the sautéed vegetables with the cooked quinoa, feta cheese, cumin, paprika, salt, and pepper. Mix well.

Stuffing and Baking

    Stuff Squash

    Fill each half of the acorn squash with the quinoa and vegetable mixture, pressing down gently to pack it in.

    Place the stuffed squash halves on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the squash is tender.
