Preheat Oven
Preheat your oven to 375°F (190°C).

Prepare Bell Peppers
Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.

Cook Ground Beef
In a large skillet over medium heat, brown the ground beef until fully cooked, about 7-10 minutes. Drain excess fat.

Add Vegetables and Spices
Add chopped onion and minced garlic to the skillet with the beef. Cook until the onion is translucent, about 3-4 minutes. Stir in diced tomatoes, cooked rice, chili powder, cumin, salt, and black pepper. Mix well and let simmer for 5 minutes.

Add Cheese
Remove the skillet from heat and stir in half of the shredded cheddar cheese until melted and well combined.
Stuffing Peppers

Fill Peppers
Spoon the beef and rice mixture into each prepared bell pepper until they are filled to the top.

Sprinkle the remaining cheddar cheese over the tops of the stuffed peppers.

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
