Method

Chili Preparation

    Cook the Meat or Veggie

    In a large pot, heat olive oil over medium heat. Add the ground beef or veggie alternative and cook until browned, about 5-7 minutes.

    Add Vegetables

    Add diced onion, minced garlic, and diced bell pepper to the pot. Sauté for 3-4 minutes until the vegetables are softened.

    Add Remaining Ingredients

    Stir in canned diced tomatoes, kidney beans, black beans, chili powder, cumin, paprika, salt, black pepper, and water or beef broth. Mix well.

    Simmer the Chili

    Bring the mixture to a boil, then reduce heat to low and let it simmer uncovered for about 30-40 minutes, stirring occasionally.

Guacamole Preparation

    Prepare the Avocados

    Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

    Mash and Season

    Mash the avocados with a fork. Add lime juice, salt, garlic powder, diced tomato, and chopped cilantro. Mix until well combined.

Pickled Jalapenos Preparation

    Prepare the Jalapenos

    In a saucepan, combine sliced jalapenos, white vinegar, water, sugar, and salt.

    Bring to a Boil

    Bring the mixture to a boil over medium-high heat, stirring until the sugar and salt dissolve.

    Cool and Store

    Remove from heat and let it cool. Transfer to a jar and refrigerate for at least 1 hour before serving.
