    In a small bowl, mix salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub the spice mixture evenly over the brisket, ensuring it is well coated.

    In a large skillet, heat olive oil over medium-high heat. Add the brisket and sear on all sides until browned, about 3-4 minutes per side. Remove from skillet and set aside.

Cooking the Onions

    Caramelize the Onions

    In the same skillet, reduce heat to medium and add butter. Once melted, add the sliced onions. Cook, stirring occasionally, until the onions are soft and caramelized, about 15-20 minutes.

Combining and Cooking

    In a slow cooker or a large pot, combine the caramelized onions, beef broth, thyme, and bay leaves. Place the seared brisket on top of the onion mixture.
