Prepare the Filling

Mix the Ingredients
In a large bowl, combine the smoked brisket, cabbage, carrots, green onions, soy sauce, ginger, garlic, black pepper, and sesame oil. Mix well until all ingredients are evenly combined.
Assemble the Egg Rolls

Fill the Wrappers
Take an egg roll wrapper and place it on a clean surface in a diamond shape. Spoon about 2-3 tablespoons of the brisket filling into the center of the wrapper.

Roll the Wrapper
Fold the bottom corner of the wrapper over the filling, then fold in the sides. Roll it up tightly towards the top corner, sealing the edge with a little water. Repeat with remaining wrappers and filling.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
