Preparation of Shakshuka

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, cooking until softened, about 5-7 minutes.

    Add Garlic and Spices

    Stir in the minced garlic, cumin, paprika, and cayenne pepper. Cook for an additional minute until fragrant.

    Incorporate Tomatoes

    Pour in the canned diced tomatoes (with their juices) and season with salt and black pepper. Stir to combine and bring the mixture to a simmer. Let it cook for about 10-15 minutes until slightly thickened.

    Add Eggs

    Using a spoon, create small wells in the tomato mixture and crack an egg into each well. Cover the skillet and cook until the eggs are set to your liking, about 5-8 minutes for runny yolks.

    Once the eggs are cooked, sprinkle the chopped parsley over the top for freshness.
