Method

Preparation of Chicken Breast

    Prepare the Chicken

    If using chicken breasts for schnitzel, place them between two sheets of plastic wrap and pound them to about 1/2 inch thickness using a meat mallet. If grilling, simply season the chicken breasts.

Schnitzel Breading Process

    Set up Breading Station

    In three separate shallow dishes, place flour in the first dish, beaten eggs in the second, and breadcrumbs mixed with salt, black pepper, and paprika in the third.

    Bread the Chicken

    Dredge each piece of chicken in flour, shaking off excess. Next, dip into the beaten eggs, allowing excess to drip off. Finally, coat with the breadcrumb mixture, pressing lightly to adhere.

Cooking

    Fry the Schnitzel

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, add breaded chicken pieces and fry for 3-4 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

    For grilled chicken, preheat the grill. Mix olive oil, lemon juice, garlic powder, salt, and black pepper in a bowl. Brush the marinade over the chicken breasts and grill for about 6-7 minutes on each side, or until fully cooked.
