Prepare the Vegetables
Slice the onion and bell pepper into thin strips. Mince the garlic cloves and set aside.

Prepare the Beef
Thinly slice the beef against the grain and set aside.
Cooking

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the sliced onion and bell pepper. Sauté for about 5 minutes until they start to soften.

Cook the Beef
Increase the heat to medium-high and add the sliced beef to the skillet. Season with salt, black pepper, and Italian seasoning. Cook for about 5-7 minutes, stirring occasionally, until the beef is browned and cooked through.

Melt the Cheese
Reduce the heat to low. Layer the provolone cheese slices over the beef and vegetable mixture. Cover the skillet with a lid and let it sit for about 2-3 minutes to melt the cheese.

Prepare the Hoagie Rolls
While the cheese is melting, slice the hoagie rolls lengthwise without cutting all the way through.

Assemble the Hoagies
Once the cheese is melted, remove the skillet from heat. Use a spatula to scoop the beef and vegetable mixture into each hoagie roll. Serve immediately.
