For the Sesame Crusted Tuna

Prepare the Tuna
Season the tuna steaks with soy sauce, salt, and black pepper. Let them marinate for about 10 minutes.

Crust the Tuna
Press the tuna steaks into sesame seeds on both sides until evenly coated.

For the Crispy Sushi Rice

Cook the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine with water in a pot and bring to a boil. Reduce heat to low, cover, and simmer for about 20 minutes. Remove from heat and let it sit for 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt. Stir into the cooked rice gently.

Fry the Rice
Spread the rice into a thin layer on a baking sheet. Chill in the fridge for about 30 minutes. Cut into squares, dust with cornstarch, and fry in vegetable oil until crispy and golden.
For the Spicy Cauliflower

Roast the Cauliflower
Preheat the oven to 425°F (220°C). Toss the cauliflower florets with olive oil, sriracha sauce, garlic powder, and salt.

Bake the Cauliflower
Spread the cauliflower on a baking sheet and roast for 20-25 minutes or until tender and crispy.

In a bowl, mix mayonnaise, sriracha sauce, lemon juice, and minced garlic until well combined.
