Method
Preparation
- 1
Marinate the Fish
In a small bowl, whisk together the soy sauce, olive oil, lemon juice, minced garlic, grated ginger, salt, and black pepper. Place the salmon fillets and tuna steaks in a shallow dish and pour the marinade over them. Ensure both sides are coated. Cover and refrigerate for at least 30 minutes.
Cooking
- 2
Prepare the Pan
Heat a large skillet over medium-high heat. Add 1 tablespoon of butter and 1 tablespoon of sesame oil to the pan and allow it to melt.
- 3
Sear the Salmon or Tuna
Remove the fish from the marinade (discard the marinade) and coat the salmon with sesame seeds. Place the salmon fillets in the hot skillet, skin-side down. If using tuna, sear it directly without sesame seeds. Cook for about 4-5 minutes on one side until golden brown.
- 4
Flip and Finish Cooking
Carefully flip the salmon or tuna with a spatula and add 1 tablespoon of butter to the pan. Cook for another 3-4 minutes for salmon or 2-3 minutes for tuna, depending on desired doneness.
- 5
Garnish and Serve
Remove the fish from the pan and let it rest for a minute. Garnish with fresh herbs if desired and serve immediately with your choice of sides.
