For the Salmon

    Prepare the Salmon

    Pat the Atlantic salmon fillets dry with paper towels. Season both sides with salt and black pepper.

    Sear the Salmon

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes or until the salmon is cooked through. Remove from skillet and set aside.

For the Vegetable Medley

    Prepare the Vegetables

    In a separate pot, bring salted water to a boil. Add the fingerling potatoes and cook for about 10 minutes until tender. Add the green beans for the last 3-4 minutes of cooking. Drain and set aside.

    Combine the Vegetables

    In a large bowl, combine the cooked fingerling potatoes, green beans, and cherry tomatoes. Toss gently to mix.

For the Lemon Vinaigrette

    Make the Vinaigrette

    In a small bowl, whisk together the fresh lemon juice, Dijon mustard, honey, salt, and black pepper. Gradually whisk in the olive oil until emulsified.

    On a serving plate, arrange the vegetable medley. Top with the seared salmon fillet and drizzle with the lemon vinaigrette before serving.
