    Rinse and Cook Quinoa

    Rinse 1 cup of quinoa under cold water to remove bitterness. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until water is absorbed and quinoa is fluffy. Remove from heat and let it sit covered for an additional 5 minutes.

    Prepare Kale

    While the quinoa is cooking, remove the stems from 4 cups of kale and chop the leaves into bite-sized pieces. In a large bowl, add the kale and massage it with a pinch of salt for about 2-3 minutes until it softens slightly.

    Chop Vegetables

    Dice 1 cup of cherry tomatoes, peel and chop 1 medium cucumber, and finely slice 0.5 medium red onion. Add these chopped vegetables to the bowl with the kale.

    Prepare Dressing

    In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of lemon juice, 1 minced garlic clove, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper until well combined.

    Combine Salad

    Once the quinoa has cooled slightly, add it to the bowl with the kale and vegetables. Drizzle the dressing over the salad and toss everything together until well mixed.

    Add Toppings

    If desired, sprinkle 0.5 cup of crumbled feta cheese over the top and slice 1 medium avocado to serve alongside or on top of the salad.
