Herb Crusted Lamb Chops

Prepare the Herb Mixture
In a small bowl, combine chopped rosemary, thyme, minced garlic, olive oil, salt, and black pepper. Mix well to form a paste.

Coat the Lamb Chops
Rub the herb mixture generously over both sides of the lamb chops. Allow them to marinate for at least 30 minutes at room temperature.

Preheat Oven
Preheat your oven to 400°F (200°C).

Roast the Lamb Chops
Place the marinated lamb chops on a baking sheet and roast in the oven for 15-20 minutes, or until they reach your desired level of doneness.
Warm Israeli Couscous

Cook the Couscous
In a medium saucepan, bring vegetable broth to a boil. Add the Israeli couscous, reduce heat to low, cover, and simmer for about 10 minutes or until the couscous is tender and the liquid is absorbed.

Prepare the Tomatoes
In a bowl, toss cherry tomatoes with olive oil, salt, black pepper, and balsamic vinegar until evenly coated.

Roast the Tomatoes
Spread the tomatoes on a baking sheet and roast in the oven alongside the lamb chops for about 15 minutes, until they are blistered and soft.
Green Bean Medley

Prepare the Green Beans
Trim the ends of the green beans and set aside.

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute before adding green beans. Cook for 5-7 minutes, stirring occasionally until the beans are tender but still crisp.
