Preparation of Aioli

    Make the Horseradish Aioli

    In a small bowl, combine mayonnaise, prepared horseradish, lemon juice, minced garlic, and salt. Mix well until smooth. Adjust seasoning to taste and set aside.

Cooking the Beef and Vegetables

    Caramelize the Onions

    Slice the onion thinly. In a large skillet over medium heat, add a tablespoon of oil. Add sliced onions and cook, stirring occasionally, until they are golden brown, about 15-20 minutes.

    Sauté the Mushrooms

    While the onions are caramelizing, clean and slice the mushrooms. In another skillet, heat a tablespoon of oil over medium heat and add the mushrooms. Sauté until tender and browned, about 5-7 minutes. Set aside.

    Cook the Shaved Beef

    In the same skillet used for the mushrooms, increase the heat to medium-high. Add the shaved beef and cook for 2-3 minutes until just browned, stirring occasionally. Season with salt and pepper.

Assembly

    Prepare the Rolls

    While the beef is cooking, slice the French rolls in half. If desired, toast them lightly under a broiler.

    Assemble the Sandwiches

    On the bottom half of each roll, layer the cooked shaved beef, followed by the caramelized onions, sautéed mushrooms, and a slice of Swiss cheese. Top with the other half of the roll.

    Serve with Broth

    In small bowls, heat the beef broth until hot. Serve each sandwich with a side of the hot beef broth for dipping.
