Caramelize the Onions
In a large skillet, heat olive oil over medium heat. Add the sliced onions and sprinkle with salt. Cook for about 15-20 minutes, stirring occasionally, until the onions are golden brown and caramelized.

Horseradish Aioli

Prepare the Aioli
In a bowl, combine mayonnaise, prepared horseradish, lemon juice, and minced garlic. Mix well until smooth, then season with salt and black pepper to taste. Set aside.
Au Jus

Make the Au Jus
In a small saucepan, combine beef broth, soy sauce, Worcestershire sauce, and garlic powder. Bring to a simmer over medium heat and let it cook for about 5-10 minutes to allow the flavors to meld.
Sandwich Assembly

Assemble the Sandwiches
On each sub roll or half of the French baguette, layer a generous portion of the caramelized onions and cooked beef. If using, add a slice of provolone cheese on top. Spread the horseradish aioli on the other half of the roll.

Serve
Serve the sandwiches warm with a side of au jus for dipping.
