Melt the Chocolate
In a heatproof bowl, melt the semi-sweet chocolate over a pot of simmering water (double boiler method), stirring until smooth. Remove from heat and let it cool slightly.

Whip the Cream
In a large mixing bowl, pour the heavy cream and use an electric mixer to whip it on medium speed until soft peaks form. Be careful not to overwhip. Set aside.

Prepare Egg Mixture
In another bowl, separate the egg yolks and whites. Add the granulated sugar and a pinch of salt to the egg yolks and whisk until the mixture is pale and creamy. Stir in the melted chocolate and vanilla extract until well combined.

Combine Mixtures
Gently fold the whipped cream into the chocolate mixture using a spatula until just combined. Then, carefully fold in the beaten egg whites, being cautious not to deflate the mixture.

Spoon the mousse into serving dishes or cups and refrigerate for at least 2 hours, or until set.
