Begin by washing and chopping all vegetables. Peel the carrots and slice them into thin rounds. Dice the bell pepper and zucchini into bite-sized pieces. Rinse the broccoli florets under cold water.

Cook the Chicken
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the chicken breast with salt and black pepper. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F). Remove the chicken from the skillet and let it rest.

Sauté the Garlic and Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for about 30 seconds until fragrant. Then, add the carrots, bell pepper, zucchini, and broccoli florets. Stir-fry the vegetables for about 5-7 minutes until they are tender but still crisp.

Slice the cooked chicken into strips and return it to the skillet with the vegetables. Pour the soy sauce over the mixture and toss everything together to combine. Cook for an additional 2 minutes to heat through. Garnish with fresh parsley before serving.
