Chicken Marinade

Method

Chicken Marinade Preparation

  1. 1

    Marinate the Chicken

In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Whisk until well combined.

  2. 2

    Add Chicken

Cut the chicken breasts into bite-sized cubes and add them to the marinade. Ensure the chicken is coated thoroughly.

  3. 3

    Marinate

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 4 hours for maximum flavor.

Tzatziki Sauce Preparation

  1. 4

    Combine Ingredients

In a medium bowl, mix together Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt.

  2. 5

    Chill

Cover and refrigerate the tzatziki sauce for at least 15 minutes to allow the flavors to meld.

Cooking and Serving

  1. 6

    Cook the Chicken

Preheat the grill or grill pan over medium-high heat. Skewer the marinated chicken pieces onto skewers and grill for about 10-12 minutes, turning occasionally, until fully cooked and charred.

  2. 7

    Prepare Pitas

While the chicken is grilling, warm the pita bread on the grill or in a skillet for about 1-2 minutes on each side.

  3. 8

    Assemble the Pitas

Remove the chicken from the skewers and place it in the warm pita bread. Top with tzatziki sauce, chopped parsley, diced tomatoes, and sliced red onion.

  4. 9

    Serve

Serve immediately while warm and enjoy your homemade chicken souvlaki!
