Preparation

    Prepare the Chicken

    Pound the chicken breasts to an even thickness for uniform cooking. Season with salt and black pepper on both sides.

    Dredge in Flour

    Coat each chicken breast in flour, shaking off excess flour.

Cooking

    Sear the Chicken

    In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.

    Cook the Mushrooms

    In the same skillet, add the remaining butter and sliced mushrooms. Cook until the mushrooms are browned and tender, about 5 minutes.

    Add Marsala wine to the skillet and scrape up any browned bits from the bottom. Allow to simmer for 2-3 minutes until reduced slightly. Stir in the chicken broth and return the chicken to the skillet. Simmer for an additional 5 minutes.

    In a bowl, whisk together the eggs, lemon juice, and grated Parmesan cheese.

    After dredging the chicken in flour, dip each piece into the egg mixture before searing.
