Start by washing the fresh tomatoes thoroughly under running water. Remove stems and slice them into quarters.

Peel the garlic cloves and chop them finely. In a large pan, heat the olive oil over medium heat. Add the chopped garlic and sauté for about 2-3 minutes until fragrant but not browned.

Season the Mixture
Add the basil leaves, salt, and black pepper to the tomato mixture. Stir well and let it simmer for another 5 minutes to combine the flavors.

Pour in the vinegar and lemon juice into the mixture. Stir to combine and bring it to a gentle boil. Cook for an additional 5 minutes.

While the mixture is cooking, sterilize the canning jars by placing them in boiling water for 10 minutes. Carefully remove them and let them cool slightly.
