    In a large bowl, combine olive oil, soy sauce, minced garlic, brown sugar, black pepper, paprika, salt, chili powder, and dried thyme. Mix well until the brown sugar is dissolved.

    Place the beef ribs in a resealable plastic bag or a large dish. Pour the marinade over the ribs, ensuring they are fully coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

    Prepare the Smoker

    Soak wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

    Smoke the Ribs

    Remove the ribs from the marinade and let any excess drip off. Place the ribs in the smoker, bone side down, and add the soaked wood chips to the smoker box. Smoke the ribs for 6 to 8 hours, maintaining a temperature of 225°F (107°C).

    Check for Tenderness

    After 6 hours, check the ribs for tenderness. They should be tender and the meat should pull away from the bone easily. If not tender, continue smoking for another hour.
