For the Marinade

Prepare the Marinade
In a large bowl, whisk together olive oil, red wine vinegar, minced garlic, dried oregano, paprika, salt, and black pepper until well combined.

Marinate the Steak
Place the London Broil in a resealable plastic bag and pour the marinade over it. Seal the bag, ensuring the steak is well coated. Refrigerate for at least 2 hours, preferably overnight.

For the Zucchini Croquettes

Prepare the Mixture
In a large bowl, combine grated zucchini, eggs, flour, grated Parmesan, salt, and black pepper. Mix until well combined.

Shape and Fry the Croquettes
Heat olive oil in a large skillet over medium heat. Scoop about 2 tablespoons of the zucchini mixture and form into small patties. Fry until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

Make the Chimichurri
In a bowl, combine chopped cilantro, minced garlic, red wine vinegar, olive oil, salt, and black pepper. Mix well and let sit for 15 minutes to allow the flavors to meld.
