    Prepare the Ingredients

    Start by preparing all the ingredients. Slice the bell peppers, onion, and water chestnuts. Mince the garlic and ginger. Set aside.

    Sauté the Aromatics

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and ginger, and sauté for about 1-2 minutes until fragrant.

    Cook the Prawns

    Add the prawns to the skillet and cook for 3-4 minutes or until they turn pink and start to curl. Remove the prawns and set aside.

    Sauté the Vegetables

    In the same skillet, add the sliced bell peppers, yellow onion, and water chestnuts. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.

    Combine and Add Sauce

    Return the prawns to the skillet, pour in the black bean sauce, and mix well. Season with salt and black pepper to taste.

    Make a well in the center of the mixture and pour in the beaten eggs. Stir gently to scramble the eggs and combine with the prawns and vegetables until the eggs are cooked through.
