Prepare the Chicken
In a large pot, heat olive oil over medium heat. Add minced garlic and ginger, sauté for 1-2 minutes until fragrant. Add the chicken breast and cook until browned on both sides, about 5-7 minutes.

Add Broth and Vegetables
Pour in the chicken broth and bring to a boil. Once boiling, reduce heat and add broccoli, napa cabbage, mushrooms, carrots, snow peas, water chestnuts, zucchini, and baby corn. Season with salt and black pepper.

Allow the soup to simmer for 10 minutes. Then, add the soft noodles and cook for an additional 5-7 minutes, or until the noodles are tender.

Taste the soup and adjust seasoning if necessary. Remove the chicken breast, shred it, and return the chicken to the pot. Stir to combine and serve hot.
