    Prepare the Beef

    Slice the beef flank steak against the grain into thin strips. In a bowl, combine the soy sauce, brown sugar, and cornstarch. Add the beef strips to the bowl and marinate for at least 30 minutes.

    Cook the Beef

    Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef strips and stir-fry until browned and cooked through, about 3-5 minutes. Remove the beef from the skillet and set aside.

    Prepare the Sauce

    In the same skillet, add the remaining 2 tablespoons of vegetable oil. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant. Add the sliced yellow onion and cook until softened, about 2-3 minutes.

    Combine Ingredients

    Return the cooked beef to the skillet, along with the chopped green onions. Stir everything together and cook for an additional 1-2 minutes until heated through.

    Serve the Mongolian beef hot, garnished with crispy rice noodles on top.
