Fried Calamari and Vegetables

Preparation and Cooking
Prepare the Cabbage
Shred the cabbage finely and place it in a serving bowl. Set aside.
Prepare the Vegetables
Slice the yellow onion, green onion, green bell pepper, red bell pepper, and jalapeño pepper into thin strips.
Prepare the Calamari
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Toss the calamari rings in the flour mixture until evenly coated.
Fry the Calamari
Heat vegetable oil in a deep frying pan over medium-high heat. Once the oil is hot, carefully add the coated calamari in batches and fry until golden brown, about 2-3 minutes per batch. Remove and drain on paper towels.
Sauté the Vegetables
In a large skillet, add a little oil if needed, and sauté the yellow onion, green onion, green bell pepper, red bell pepper, and jalapeño pepper over medium heat until they are soft, about 5-7 minutes. Season with salt and pepper to taste.
Combine and Serve
On a large plate, place a bed of sautéed vegetables on top of the shredded cabbage. Top with the fried calamari and serve immediately with lemon wedges on the side.
