Prepare the Beef
Slice the beef against the grain into thin strips. Marinate in 1 tablespoon of dark soy sauce, minced garlic, minced ginger, salt, and pepper for about 15 minutes.

Cook the Noodles
Cook the Cantonese Hefen according to package instructions. Drain and set aside.

Stir-Fry the Beef
In a large pan or wok, heat 1 tablespoon of vegetable oil over high heat. Add the marinated beef and stir-fry for about 2-3 minutes until browned. Remove the beef from the pan and set aside.

Combine Ingredients
In the same pan, add the remaining tablespoon of vegetable oil. Add the bean sprouts and chopped green onions, and stir-fry for 1-2 minutes.

Add Noodles and Sauce
Return the beef to the pan, add the cooked Hefen, and pour in the remaining dark soy sauce. Stir-fry everything together for another 2-3 minutes until well combined and heated through.

Taste and adjust seasoning if necessary. Serve hot.
