Soak Chickpeas
Place the dried chickpeas in a bowl and cover them with water. Soak for at least 8 hours or overnight.

Prepare Falafel Mixture
Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, onion, garlic, parsley, cumin, coriander, baking powder, salt, and pepper. Pulse until a coarse mixture forms.

Form Patties
Using your hands, form the mixture into small patties or balls, about the size of a golf ball. Place them on a plate.

Heat Oil
In a deep pan, heat oil over medium heat. Ensure the oil is hot enough for frying.

Fry Falafel
Carefully add the falafel patties to the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes per side.

Drain and Serve
Remove the falafel from the oil and drain on paper towels. Serve warm with tahini sauce.
