Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Combine Dry Ingredients

In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and shredded coconut.

Cream Butter and Sugar

In another bowl, cream the softened butter until light and fluffy. Gradually add the sugar, continuing to beat until well combined.

Add Eggs and Vanilla

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Mixtures

Gradually add the dry ingredients to the wet mixture, alternating with the coconut milk. Mix until just combined.

Bake the Cakes

Divide the batter evenly between the two prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Cool the Cakes

Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.

Prepare Whipped Cream

In a medium bowl, whip heavy cream with sugar and vanilla until soft peaks form.

Assemble the Cake

Once the cakes are cool, place one layer on a serving plate. Spread whipped cream on top, add berries, then place the second layer on top. Frost the top with more whipped cream and garnish with additional berries.
