Prepare the Vegetables
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Slice the onion into thin rings and add to the skillet. Cook, stirring occasionally, until caramelized, about 10-15 minutes.

Add the Peppers and Spinach
Chop the roasted red peppers and add them to the skillet with the caramelized onions. Stir in the spinach and cook until wilted, about 2-3 minutes.

Add the Prime Rib
Dice the prime rib into small pieces and add it to the skillet. Stir to combine with the vegetables. Season with salt and black pepper to taste. Cook for another 5 minutes until heated through.

Cook the Eggs
In a separate skillet, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the skillet and cook sunny side up until the whites are set but yolks are still runny, about 3-4 minutes.

Divide the prime rib hash among four plates, top each serving with a sunny side up egg, and sprinkle with Parmesan cheese and horseradish.
