Shrimp Scampi

Yukon Gold Mashed Potatoes

Asparagus

Fried Capers

Method

Shrimp Scampi

  1. 1

    Marinate the Shrimp

In a bowl, combine the shrimp, olive oil, garlic, red pepper flakes, lemon juice, parsley, salt, and black pepper. Toss to coat the shrimp and let marinate for 15-20 minutes.

  2. 2

    Grill the Shrimp

Preheat your grill to medium-high heat. Thread the marinated shrimp onto skewers and grill for 2-3 minutes on each side, or until they are opaque and cooked through.

Yukon Gold Mashed Potatoes

  1. 3

    Prepare the Potatoes

In a large pot, bring salted water to a boil. Add the cubed Yukon Gold potatoes and cook until tender, about 15-20 minutes.

  2. 4

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until creamy and smooth. Adjust seasoning to taste.

Asparagus

  1. 5

    Prepare the Asparagus

In a bowl, toss the asparagus with olive oil, salt, and black pepper. Make sure they are evenly coated.

  2. 6

    Grill the Asparagus

Place the asparagus on the grill and cook for 5-7 minutes, turning occasionally, until they are tender and have grill marks.

Beurre Blanc

  1. 7

    Make the Sauce

In a saucepan over medium heat, combine white wine and shallots. Reduce by half until syrupy. Stir in heavy cream and bring to a simmer.

  2. 8

    Finish the Sauce

Remove from heat and gradually whisk in cold cubed butter until the sauce is smooth and glossy. Season with salt to taste.

Fried Capers

  1. 9

    Fry the Capers

In a small saucepan, heat the olive oil over medium heat. Add the capers and fry for about 2-3 minutes until they are crispy. Remove and drain on paper towels.
