    Prepare the Potatoes

    Peel and cut the potatoes into thick strips to create fries. Soak them in cold water for at least 30 minutes to remove excess starch.

    Make the Beer Batter

    In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper. Gradually add the beer to the dry ingredients, stirring until the batter is smooth and free of lumps.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises, it's ready.

    Fry the Potatoes

    Drain the soaked potatoes and pat them dry with a paper towel. Working in batches, carefully add the potato strips to the hot oil. Fry for about 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while hot.

    Fry the Fish

    Dip each fish fillet into the beer batter, ensuring it's fully coated. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Serve

    Serve the fish and chips hot, with lemon wedges and house-made tartar sauce on the side.
