Crispy Fried Calamari

Method

Instructions

  1. 1

    Prepare the Calamari

Begin by cleaning and cutting the calamari into rings if not pre-cut. Rinse under cold water and pat dry with paper towels.

  2. 2

    Make the Batter

In a large bowl, mix together the flour, cornstarch, salt, black pepper, and paprika. In another bowl, whisk together the eggs and buttermilk until well combined.

  3. 3

    Coat the Calamari

Dip each calamari ring into the egg mixture, allowing excess to drip off, then dredge in the flour mixture until thoroughly coated.

  4. 4

    Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  5. 5

    Fry the Calamari

Carefully add the coated calamari rings in batches to the hot oil. Do not overcrowd the pan. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

  6. 6

    Prepare the Aioli

In a small bowl, mix the mayonnaise, minced garlic, Dijon mustard, and lemon juice until smooth. Adjust seasoning to taste.

  7. 7

    Prepare the Cocktail Sauce

In another bowl, combine ketchup and horseradish sauce. Mix well to create the Bloody Mary cocktail sauce.

  8. 8

    Serve

Serve the crispy fried calamari hot, accompanied by the artichoke hearts, mustard-garlic aioli, and Bloody Mary cocktail sauce.
