Prepare the Crab Cakes
In a mixing bowl, gently combine crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, and panko breadcrumbs. Season with salt and pepper to taste.

Form the Crab Cakes
Form the mixture into patties (about 3 inches in diameter) and place them on a parchment-lined baking sheet. Refrigerate for at least 30 minutes to help them firm up.

Cook the Crab Cakes
In a large skillet, melt butter over medium heat. Add the crab cakes and cook for about 3-4 minutes on each side until golden brown and heated through. Remove from skillet and keep warm.

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide it into the water. Poach for about 3-4 minutes until the whites are set but yolks are still runny. Remove with a slotted spoon.
