Shrimp Preparation

    Prepare the Shrimp

    In a large bowl, combine the salt, black pepper, and cayenne pepper. Toss the shrimp in the spice mixture until evenly coated.

    Set Up Breading Station

    Set up a breading station with three shallow bowls: one for flour, one for the beaten egg, and one for the coconut flakes.

    Bread the Shrimp

    Dredge each shrimp in flour, shaking off the excess, then dip into the beaten egg, and finally coat with coconut flakes. Make sure each shrimp is fully covered.

Frying

    Heat the Oil

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Shrimp

    Working in batches, carefully add the breaded shrimp to the hot oil. Fry for 2-3 minutes or until golden brown and cooked through. Remove the shrimp from the oil and drain on paper towels.

Cajun Marmalade Preparation

    In a small bowl, mix together the orange marmalade, Cajun seasoning, and fresh lime juice until well combined.

    Serve the crispy coconut shrimp hot with the Cajun marmalade on the side. Garnish with chopped green onions and crispy noodles for added texture.
