Method

Cake

  1. 1

    Prepare the Chocolate Mixture

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.

  2. 2

    Mix the Batter

In a separate bowl, whisk together the granulated sugar and eggs until pale and fluffy. Gradually pour in the melted chocolate mixture, mixing until combined. Add the all-purpose flour, vanilla extract, and salt, and stir until just combined.

  3. 3

    Bake the Cake

Preheat your oven to 200°C (400°F). Grease and flour individual ramekins. Pour the batter into the prepared ramekins and bake for 10-12 minutes, until the edges are firm but the center is still soft.

Candied Pecans

  1. 4

    Prepare the Pecan Mixture

In a skillet over medium heat, melt the unsalted butter. Add the pecan halves, granulated sugar, and cinnamon, stirring to coat the pecans evenly.

  2. 5

    Candy the Pecans

Continue to cook the mixture for about 5-7 minutes, stirring frequently, until the sugar has caramelized and the pecans are golden brown. Transfer to a parchment-lined baking sheet to cool.

Sauces

  1. 6

    Prepare the Chocolate Sauce

In a small saucepan, heat the heavy cream until just simmering. Remove from heat and add the dark chocolate, stirring until melted and smooth.

  2. 7

    Prepare the Caramel Sauce

If using store-bought caramel sauce, simply warm it in a small saucepan over low heat. If making caramel from scratch, combine sugar and water in a saucepan and cook until it turns amber.

Serving

  1. 8

    Assemble the Dessert

To serve, carefully invert the baked chocolate cakes onto serving plates. Top each with a scoop of vanilla ice cream, drizzle with both chocolate and caramel sauces, and sprinkle with candied pecans.
