Preparation of Chicken Wings

Prep the Wings
Rinse and pat dry the chicken wings. In a large bowl, combine baking powder, salt, and black pepper. Add the wings and toss until evenly coated.

First Fry
In a large pot, heat vegetable oil over medium-high heat. Once hot, fry the wings in batches for about 8-10 minutes until golden brown. Remove and drain on paper towels.

Rest and Second Fry
Let the wings rest for 10 minutes. Increase the oil temperature and fry the wings again for another 5-7 minutes until extra crispy. Drain again on paper towels.
Sauce Preparation

Buffalo Sauce
In a small saucepan over medium heat, melt the butter, then stir in the hot sauce and garlic powder until combined. Toss the fried wings in the buffalo sauce until well coated.

Asian Sesame Sauce
In a bowl, combine soy sauce, honey, sesame oil, rice vinegar, and sesame seeds. Toss the fried wings in the sesame sauce until evenly coated.
