Prepare the Crust

    Mix the Ingredients

    In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.

    Press into Pan

    Press the mixture firmly into the bottom of a 9-inch springform pan. Bake at 350°F (175°C) for 8-10 minutes, then remove and let cool.

Make the Filling

    Blend the Filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add sugar and vanilla, mixing until fully combined.

    Add Sour Cream and Eggs

    Add sour cream and mix well. Add eggs one at a time, mixing on low speed until just combined.

    Pour into Crust

    Pour the filling over the cooled crust and smooth the top.

    Bake the Cheesecake

    Bake at 325°F (160°C) for 55-60 minutes until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.

Prepare the Topping

    Mix Strawberries

    In a bowl, combine sliced strawberries with sugar. Let sit for about 15 minutes to release juices.

Serve

    Chill and Serve

    Refrigerate the cheesecake for at least 4 hours or overnight. Serve topped with the strawberry mixture.
